Toasted Sweetcorn Old Fashioned Ingredients
- 60ml Ballantine’s 7yr Old
- 4 dashes Angostura bitters
- 10ml demerara charred corn syrup
How To Make a Toasted Sweetcorn Old Fashioned
- Combine all the ingredients in a rocks glass and fill with cubed ice.
- Stir the ingredients to chill and dilute the liquid.
- Add more ice and continue to stir.
- Once the drink is about ready, take an orange and peel a large strip using a vegetable peeler.
- Twist the orange oils over the drink and place neatly in amongst the ice cubes.
Charred Corn Syrup Ingredients
- 2 corn on the cob or 1 tin sweetcorn
- 500g demerara sugar
- 500g water
How To Make charred corn syrup
- Slice the kernels off the corn on the cob.
- In a skillet, toast the corn until it reaches a medium char, caramelising the sugars.
- Turn off the heat, add sugar and water, and stir to dissolve the sugar.
- If needed, apply more heat to fully dissolve.
- Let it cool for 30 minutes, then sieve the syrup and bottle it.
